How It Works

Water chemistry is one of the most impactful variables in brewing. The sulfate-to-chloride ratio is key: ratios above 2:1 accentuate hop bitterness and dryness (ideal for IPAs), while ratios below 1:1 emphasize malt sweetness and fullness (ideal for stouts and malty beers). Calcium (50-150 ppm) supports enzyme activity during mashing and promotes yeast health. Famous brewing water profiles include Burton-on-Trent (very high sulfate for pale ales), Dublin (high bicarbonate for stouts), and Pilsen (very soft water for pilsners). Start with RO or distilled water and build up to your target profile for the most control.
