How It Works

The grain bill is the backbone of any beer recipe. PPG (points per pound per gallon) measures a grain's extract potential — 2-row malt is about 37 PPG, while crystal malts range from 33-35 PPG. Brewhouse efficiency is how much of that potential your system actually extracts; typical values are 65-80%. Most recipes use 80-90% base malt (like 2-row, Pilsner, or Maris Otter) with the remainder being specialty grains for color, flavor, and body. Keep specialty grains under 25% of the total bill for balanced beer.
